Gnocchi Ingredients

Gnocchi Preparation Method
- Prepare a large pot of boiling water.
- Cook the potatoes with water and salt in the pressure cooker for approximately 10 minutes.
- Wait for it to cool, knead and add the margarine, grated cheese and egg yolks.
- Mix and add the flour little by little, until it no longer sticks to your hands.
- Make rolls with a portion of dough and cut into small pieces.
- Place portions in boiling water.
- Let it cook until the gnocchi rise to the surface.
- Remove with a slotted spoon and cover with the sauce.
Sauce Preparation Method
- Cut the tomatoes into small pieces.
- In a pan, add the oil, onion and fry until golden.
- Add the tomatoes and sauté until completely dissolved.
- Add the oil, seasonings, salt and water.

Use drier potatoes. “Watery” potatoes are the enemy of gnocchi.
Depending on the type of potato, you may need to add a little more or less wheat flour.
