No one can resist a good dish of juicy and nutritious gnocchi!

Gnocchi Ingredients

  • 2 kg of potatoes
  • 2 excited
  • 1 and ½ tablespoons of margarine
  • 4 cups (tea) of wheat flour
  • 1 cup grated parmesan cheese
  • Salt to taste

Sauce Ingredients

  • 8 ripe tomatoes, skinned and seeded
  • 1 onion, very thinly sliced
  • 2 tablespoons of olive oil
  • 2 tablespoons of oil
  • 1 cup (tea) of water
  • Seasonings to taste
  • Salt to taste

Gnocchi Preparation Method

  1. Prepare a large pot of boiling water.
  2. Cook the potatoes with water and salt in the pressure cooker for approximately 10 minutes.
  3. Wait for it to cool, knead and add the margarine, grated cheese and egg yolks.
  4. Mix and add the flour little by little, until it no longer sticks to your hands.
  5. Make rolls with a portion of dough and cut into small pieces.
  6. Place portions in boiling water.
  7. Let it cook until the gnocchi rise to the surface.
  8. Remove with a slotted spoon and cover with the sauce.

Sauce Preparation Method

  1. Cut the tomatoes into small pieces.
  2. In a pan, add the oil, onion and fry until golden.
  3. Add the tomatoes and sauté until completely dissolved.
  4. Add the oil, seasonings, salt and water.

Mom Tips

Use drier potatoes. “Watery” potatoes are the enemy of gnocchi.

Depending on the type of potato, you may need to add a little more or less wheat flour.

Always remember: Don’t forget that good gnocchi is one that tastes like potatoes and not like flour.
