Ingredients
- 6 large tomatoes cut
- 4 cloves of garlic
- 1 pack of green scent
- Black pepper to taste
- Salt to taste
- 4 chopped onions
- 2 tablespoons olive oil
- 2 tablespoons of vinegar
- 2 egg yolks, sifted
- Grated parmesan cheese to taste (optional)
Preparation Mode
- In a pan, heat the olive oil over medium heat and, when hot, sauté the onions without letting them darken.
- Heat the tomatoes in 4.2 liters of water, garlic, green chillies, pepper and salt in another pan.
- Let it boil until the tomatoes are falling apart.
- Pour everything over the onion and mix.
- Pass everything through a coarse sieve, pressing the tomato and onion well to remove as much juice as possible.
- In a heated soup bowl, add the vinegar and egg yolks, beating well so they dissolve.
- Season with pepper and salt.
- Gradually pour in the boiling cream, whisking so it doesn’t curdle.
- Serve sprinkled with cheese and toast.
