Ingredients

  • 6 large tomatoes cut
  • 4 cloves of garlic
  • 1 pack of green scent
  • Black pepper to taste
  • Salt to taste
  • 4 chopped onions
  • 2 tablespoons olive oil
  • 2 tablespoons of vinegar
  • 2 egg yolks, sifted
  • Grated parmesan cheese to taste (optional)

Preparation Mode

  1. In a pan, heat the olive oil over medium heat and, when hot, sauté the onions without letting them darken.
  2. Heat the tomatoes in 4.2 liters of water, garlic, green chillies, pepper and salt in another pan.
  3. Let it boil until the tomatoes are falling apart.
  4. Pour everything over the onion and mix.
  5. Pass everything through a coarse sieve, pressing the tomato and onion well to remove as much juice as possible.
  6. In a heated soup bowl, add the vinegar and egg yolks, beating well so they dissolve.
  7. Season with pepper and salt.
  8. Gradually pour in the boiling cream, whisking so it doesn’t curdle.
  9. Serve sprinkled with cheese and toast.
