Nutritionist Jessica Peyroux, known on the networks under the nickname @jessidiet.nutrition, recently shared her banana bread recipe. A preparation that will make you totally addicted. But rest assured without butter or sugar, you will be able to enjoy this cake and eat it without feeling guilty. So here’s how to do it.

For the recipe you will need:

  • 4 ripe bananas (including one for decoration)
  • 100g sweet potato flour
  • 100 g of cornstarch
  • 100 g of almond powder
  • 1 packet of baking powder
  • 125 g dark chocolate in pieces
  • 1 natural yogurt
  • 2 eggs
  • 1 pinch of salt
  • 1 scoop of vanilla flavor
  • 80 g mixed zucchini (for even more fondant, optional)
  • A few pecans for decoration

  1. Start by preheating the oven to 170°C.
  2. Then, mash 3 bananas with a fork. Mix the zucchini or grate it very finely.
  3. Then mix the dry ingredients in a bowl.
  4. Add the eggs, mashed bananas, mixed zucchini and yogurt. Stir everything well to obtain a homogeneous paste.
  5. Add the dark chocolate pieces. Then, pour the dough into a silicone mold lined with parchment paper.
  6. Cut the remaining banana in half lengthwise and place on top. Decorate with a few pecans and bake the cake for about 1 hour.

Make sure to consume it within two days!
