A practical suggestion for any day. An eggplant dish that everyone will love!
Ingredients
- 3 cups (tea) of wheat flour
- 1 cup (tea) of milk
- 1 cup (tea) of oil
- ½ cup (tea) of grated parmesan cheese
- 1 cup (tea) of chopped tomato
- ½ cup (tea) of chopped green olives
- 3 eggs
- 1 teaspoon salt
- 1 tablespoon baking powder
Ingredients Filling
- 400 grams of ground beef
- 1 tablespoon of powdered meat seasoning
- 2 sliced or cubed eggplants sautéed in olive oil
- 1 and ½ cup (tea) of tomato sauce
- 3 tablespoons of olive oil
- 1 chopped onion
- 2 crushed garlic cloves
- Salt to taste
Preparation Method Filling
- In a saucepan, over medium heat, heat the olive oil.
- Brown the onion and garlic.
- Add the ground beef and cook until all the water has evaporated, stirring occasionally.
- Season with salt and set aside.
- In a blender, blend 2/3 of the eggplant and tomato sauce until a paste forms.
- Mix this cream with the reserved meat.
- Add the seasoning and cook over low heat for 5 minutes. Turn off and let cool.
Dough Preparation Method
- Grease and flour a baking dish of your choice or a 25 cm x 35 cm one. Set aside.
- Preheat the oven to medium temperature.
- In a blender, beat the oil, milk, eggs, salt, parmesan cheese and flour.
- Add the yeast and mix with a spoon.
- Place half of the dough in the baking dish.
- Spread the eggplant and meat sauté on top.
- Cover with olives, tomatoes and eggplant slices (1/3 left).
- Place the remaining dough over the filling.
- Bake for 35 minutes or until lightly golden.
- Serve.
Mom’s Tips
Before placing in the oven, if you prefer, sprinkle the pie with grated mozzarella cheese.
Yields approximately 8 servings.
