A practical suggestion for any day. An eggplant dish that everyone will love!


  • 3 cups (tea) of wheat flour
  • 1 cup (tea) of milk
  • 1 cup (tea) of oil
  • ½ cup (tea) of grated parmesan cheese
  • 1 cup (tea) of chopped tomato
  • ½ cup (tea) of chopped green olives
  • 3 eggs
  • 1 teaspoon salt
  • 1 tablespoon baking powder

Ingredients Filling

  • 400 grams of ground beef
  • 1 tablespoon of powdered meat seasoning
  • 2 sliced ​​or cubed eggplants sautéed in olive oil
  • 1 and ½ cup (tea) of tomato sauce
  • 3 tablespoons of olive oil
  • 1 chopped onion
  • 2 crushed garlic cloves
  • Salt to taste

Preparation Method Filling

  1. In a saucepan, over medium heat, heat the olive oil.
  2. Brown the onion and garlic.
  3. Add the ground beef and cook until all the water has evaporated, stirring occasionally.
  4. Season with salt and set aside.
  5. In a blender, blend 2/3 of the eggplant and tomato sauce until a paste forms.
  6. Mix this cream with the reserved meat.
  7. Add the seasoning and cook over low heat for 5 minutes. Turn off and let cool.

Dough Preparation Method

  1. Grease and flour a baking dish of your choice or a 25 cm x 35 cm one. Set aside.
  2. Preheat the oven to medium temperature.
  3. In a blender, beat the oil, milk, eggs, salt, parmesan cheese and flour.
  4. Add the yeast and mix with a spoon.
  5. Place half of the dough in the baking dish.
  6. Spread the eggplant and meat sauté on top.
  7. Cover with olives, tomatoes and eggplant slices (1/3 left).
  8. Place the remaining dough over the filling.
  9. Bake for 35 minutes or until lightly golden.
  10. Serve.

Mom’s Tips

Before placing in the oven, if you prefer, sprinkle the pie with grated mozzarella cheese.
