To serve as a starter or for cold nights, how about a tasty and hearty bean soup? Hmmmm!!!
Ingredients
- 250 grams of white beans
- 1 pack of green scent
- 1 medium onion
- 1 clove of garlic
- 1 and ½ tablespoon of butter
- 4 celeries (only the white part), sanitized
- 2 leeks (white part only), sanitized
- 3 large tomatoes, chopped
- 2 egg yolks, beaten with 1 and ½ tablespoons of butter
- Black pepper to taste
- Salt to taste
Preparation Mode
- Cut the celery into pieces and the leek into thin slices. Reserve.
- With plenty of water, cook the beans with the green chillies, onion and garlic until they are soft.
- Heat the butter, without letting it color, add the celery, leeks and tomatoes and cook until they fall apart.
- Mix in the cooked beans, bring to a boil and season with pepper and salt.
- Pass through a coarse sieve, or blend in a blender.
- Return to heat and let it boil.
- When serving, add the beaten egg yolks and mix well.
Mom Tips
Serve the soup with croutons.
Croutons = small pieces of bread toasted, seasoned and browned in the wood, in oil or olive oil.
Approximate soup yield is 6 servings.
