Ingredients
- 4 medium eggplants
- 7 tablespoons of olive oil
- 2 tablespoons of butter
- ½ chopped onion
- ½ chopped yellow pepper
- ½ cup chopped green olives
- ½ cup black raisins (optional)
- 2 cups shredded smoked chicken
- 1 chopped seedless tomato
- Salt to taste
- 1 cup (tea) cream cheese
- 1 and ½ cups of grated parmesan cheese
Preparation Mode
- Preheat the oven to medium temperature.
- Clean the eggplants.
- Cut them in half lengthwise.
- Drizzle with olive oil, place in a mold, one next to the other.
- bake for 10 minutes.
- Remove from the oven and, with a spoon, remove the pulp from the eggplants and set aside.
- Heat a pan with butter over medium heat and fry the onion and pepper until golden.
- Add the olives, raisins, chicken, tomato and eggplant pulp.
- Season with salt and sauté for 2 minutes.
- Add the cottage cheese, mix and turn off the heat.
Assembly
- Divide the filling between the eggplants.
- Sprinkle with Parmesan cheese.
- Bake in a high oven for approximately 15 minutes.
- Remove and serve.
Mom Tips
Use parmesan cheese to grate.
In good supermarkets you can find smoked chicken from good brands.
