Ingredients

  • 4 medium eggplants
  • 7 tablespoons of olive oil
  • 2 tablespoons of butter
  • ½ chopped onion
  • ½ chopped yellow pepper
  • ½ cup chopped green olives
  • ½ cup black raisins (optional)
  • 2 cups shredded smoked chicken
  • 1 chopped seedless tomato
  • Salt to taste
  • 1 cup (tea) cream cheese
  • 1 and ½ cups of grated parmesan cheese

Preparation Mode

  1. Preheat the oven to medium temperature.
  2. Clean the eggplants.
  3. Cut them in half lengthwise.
  4. Drizzle with olive oil, place in a mold, one next to the other.
  5. bake for 10 minutes.
  6. Remove from the oven and, with a spoon, remove the pulp from the eggplants and set aside.
  7. Heat a pan with butter over medium heat and fry the onion and pepper until golden.
  8. Add the olives, raisins, chicken, tomato and eggplant pulp.
  9. Season with salt and sauté for 2 minutes.
  10. Add the cottage cheese, mix and turn off the heat.

Assembly

  1. Divide the filling between the eggplants.
  2. Sprinkle with Parmesan cheese.
  3. Bake in a high oven for approximately 15 minutes.
  4. Remove and serve.

Mom Tips

Use parmesan cheese to grate.

In good supermarkets you can find smoked chicken from good brands.

Approximate yield of 8 servings.
