Hmmm… a good zucchini recipe to accompany your everyday lunch. Try it!
Ingredients
- 2 large Italian zucchini
- Black pepper to taste
- Salt to taste
- 1 cup grated ham
- 1 cup mashed ricotta
- ½ chopped onion
- 1 diced seedless tomato
- 3 tablespoons chopped fresh basil
- 3 tablespoons chopped green olives
- Grated parmesan cheese to taste
Preparation Mode
- Preheat the oven to medium temperature.
- Clean the zucchini.
- Cut them in half lengthwise.
- Drizzle with olive oil and bake for 5 minutes.
- Remove, let it cool and remove the seeds with the help of a spoon.
- In a bowl, place the zucchini pulp, pepper, salt, ham, ricotta, onion, tomato, basil and olive.
- Stuff the zucchini and sprinkle with grated cheese.
- Place back in the oven, now on high, for 10 minutes to brown.
- Serve.

If you prefer, you can distribute the filling into smaller zucchinis.
