Hmmm… a good zucchini recipe to accompany your everyday lunch. Try it!

Ingredients

  • 2 large Italian zucchini
  • Black pepper to taste
  • Salt to taste
  • 1 cup grated ham
  • 1 cup mashed ricotta
  • ½ chopped onion
  • 1 diced seedless tomato
  • 3 tablespoons chopped fresh basil
  • 3 tablespoons chopped green olives
  • Grated parmesan cheese to taste

Preparation Mode

  1. Preheat the oven to medium temperature.
  2. Clean the zucchini.
  3. Cut them in half lengthwise.
  4. Drizzle with olive oil and bake for 5 minutes.
  5. Remove, let it cool and remove the seeds with the help of a spoon.
  6. In a bowl, place the zucchini pulp, pepper, salt, ham, ricotta, onion, tomato, basil and olive.
  7. Stuff the zucchini and sprinkle with grated cheese.
  8. Place back in the oven, now on high, for 10 minutes to brown.
  9. Serve.

Mom Tips

If you prefer, you can distribute the filling into smaller zucchinis.
