Ingredients
- 7 cups of chopped kale
- 1 cup chopped green chilli powder
- Coriander to taste
- Dill to taste
- 1 clove of minced garlic
- 1 medium onion chopped
- 1 skinless and seedless tomato, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon of wheat flour
- 2 eggs
- 4 egg whites
- Salt to taste
Preparation Mode
- Heat a non-stick frying pan with the olive oil, garlic, onion and tomato.
- Let it braise.
- Add the cabbage, green chilli, coriander, dill and cook, stirring constantly, until the vegetable is soft.
- In a blender, beat the eggs with the egg whites, wheat flour and salt.
- Add this mixture to the frying pan with the cabbage.
- Cook for approximately 10 more minutes or until the frittata is firm.
- Using a large plate, flip the frittata and return it to the frying pan, so that it browns on the other side.
- Remove and serve immediately.

You can add cubes of fried bacon to the frying.
