Preparation Mode

- Season the meat with pepper, salt, bay leaves and thyme, passing them under the string.
- Let it rest for 1 hour to taste.
- Heat the oven at high temperature.
- Smear the meat with the butter.

- Pour 1 cup of boiling water into the pan, turn the meat over and let it brown on the other side.
- Turn off the oven and only remove the meat after 5 minutes.

Mom Tips
In good butchers you can buy lamb meat tied in pieces weighing around 600 grams.
If you prefer, replace the thyme with rosemary.
