Brice Robin, a coffee connoisseur and French Barista Champion, gave us his best secrets for making perfect coffee.But for the summer, with the temperature rising and the sun beating down, we are abandoning our strong espresso or our long hot coffee a little more for an iced version. We advise you to opt for the cold brew. This drink has recently been all the rage on social networks. Brice Robin gives you his advice and his recipe to make it a success!
For those who have missed this trend, cold brew is a coffee that is brewed cold. Generally, the coffee grounds used are left to infuse for several hours at room temperature or in the fridge. The aromas are then very concentrated. You will be able to enjoy the flavors of your very cold coffee, a real ally for the morning.
Before making your cold brew, it is essential to choose a good coffee. If you choose a coffee that is not of good quality, this will directly impact the quality of your cold brew. Brice Robin therefore recommends going “look for specialty coffee (means high-quality coffee – editor’s note) that is noted during tasting, made by professionals, where there are no defects. These are sorted beans of higher quality than those of traditional coffee. In addition, this pays professionals and producers better because the coffee is better”. Finally, the barista ends by specifying: “Try to favor roasted and local coffee.”
In addition to the quality of the coffee, which you will have understood is an essential point, certain varieties are more suitable for making cold brew: “Opt for fruity coffees from countries like Kenya, Ethiopia or Colombia which will bring a lot of freshness and liveliness to the drink.” Once you have these two recommendations in mind, you can start preparing your cold brew. To do this, two techniques are available to you.
The first option available to you is probably the simplest, if not the quickest. Indeed, you must keep in mind that to make a cold brew, the infusion time is generally important.
So start by taking a bottle of water or a carafe to let the coffee brew. “Count 60 g of coffee for 1 liter of water”, says Brice Robin. Take water at room temperature. Let it infuse for 12 hours in the fridge. Once infused, you will be able to filter your coffee “either with a filter coffee maker using the filter holder and filter of a classic filter coffee maker, or in a tea towel if you don’t have one”.
Then your cold brew is ready, you can enjoy it “with ice and a slice of lemon or grapefruit, it’s very nice”, the expert promised.
We previously told you that cold brew generally takes time to brew. Fortunately, if you are in a hurry, Brice Robin has revealed an express recipe.
To do this, make a hot coffee that will cool on ice cubes. Indeed, the trick is to put half as much water as usual since this half of water that you are not going to put will be compensated by the ice cubes: “For example, if I usually put 30 cl of water to make my coffee, here I will only put 15 cl and 150 g of ice cubes”. The goal is to have a dilution of the ice cubes to make your instant cold brew! And yes, it’s already ready!
