For a successful aperitif with friends, nothing better than focusing on cheese. And to please as many people as possible, we found the ideal recipe, a true ode to raclette. Indeed, it is on her Instagram account that the former Top Chef candidate, Albana Auvray, shared her recipe for raclette brioches, a perfect preparation for cheese lovers. Come on, let’s roll up our sleeves and get to cooking!

To make 12 individual brioches, you will need:
- 600 g flour
- 6 de sel
- 60 g of sugar
- 200 g soft butter
- 200 ml of milk
- 2 eggs
- 22 g of baker’s yeast
- a few slices of raclette cheese
- a few slices of cured ham
The chef explains that to obtain a very smooth dough, use a robot, it will be simpler.
- Start by taking the butter out of the refrigerator to let it come to room temperature and soften.
- Then, preheat the oven to 180°C.
- Then, in a salad bowl, mix the milk, flour, salt and sugar. Add the eggs and soft butter. Stir everything well.
- Once the dough is mixed, form a ball and cover the bowl with a cloth to let the dough rest. Sift a little flour onto the work surface.
- Place the mixture on top before forming several balls with your hands.
- Roughly cut the raclette cheese so that it can flow inside the brioche when it is ready. Repeat the operation with the dry ham.
- Insert the pieces of cheese and ham inside each ball. Close each ball and place them on a baking sheet. Cover the salad bowl again with a cloth.
- After a few minutes, brush each brioche with egg yolk. Then, bake for 15 to 20 minutes.
