To make 12 individual brioches, you will need:

  • 600 g flour
  • 6 de sel
  • 60 g of sugar
  • 200 g soft butter
  • 200 ml of milk
  • 2 eggs
  • 22 g of baker’s yeast
  • a few slices of raclette cheese
  • a few slices of cured ham

The chef explains that to obtain a very smooth dough, use a robot, it will be simpler.

  1. Start by taking the butter out of the refrigerator to let it come to room temperature and soften.
  2. Then, preheat the oven to 180°C.
  3. Then, in a salad bowl, mix the milk, flour, salt and sugar. Add the eggs and soft butter. Stir everything well.
  4. Once the dough is mixed, form a ball and cover the bowl with a cloth to let the dough rest. Sift a little flour onto the work surface.
  5. Place the mixture on top before forming several balls with your hands.
  6. Roughly cut the raclette cheese so that it can flow inside the brioche when it is ready. Repeat the operation with the dry ham.
  7. Insert the pieces of cheese and ham inside each ball. Close each ball and place them on a baking sheet. Cover the salad bowl again with a cloth.
  8. After a few minutes, brush each brioche with egg yolk. Then, bake for 15 to 20 minutes.

It’s ready ! good tasting !
