Ingredients
- 1 cup of arborio rice
- 4 cups (tea) of water
- 2 garlic cloves
- 2 tablespoons extra virgin olive oil
- Sal light
- 500 ml homemade vegetable broth
- 1 small onion
- 1 glass of dry white wine
- 2 medium beets, cooked and grated
- 100 ml light cream
- Black pepper to taste
Preparation Mode
- Prepare the rice, using water, garlic, olive oil, salt, vegetable broth and onion.
- Once braised, add the wine.
- When ready, add the grated beetroot and cream little by little and mix well.
- Add the pepper and mix.
- Serve while still hot in a deep dish, preferably.
Mom Tips
The pan for this type of dish must be deep and thicker.
You can serve the risotto with feta cheese; looks very good!
