  • 1 cup of arborio rice
  • 4 cups (tea) of water
  • 2 garlic cloves
  • 2 tablespoons extra virgin olive oil
  • Sal light
  • 500 ml homemade vegetable broth
  • 1 small onion
  • 1 glass of dry white wine
  • 2 medium beets, cooked and grated
  • 100 ml light cream
  • Black pepper to taste

Preparation Mode

  1. Prepare the rice, using water, garlic, olive oil, salt, vegetable broth and onion.
  2. Once braised, add the wine.
  3. When ready, add the grated beetroot and cream little by little and mix well.
  4. Add the pepper and mix.
  5. Serve while still hot in a deep dish, preferably.

Mom Tips

The pan for this type of dish must be deep and thicker.

You can serve the risotto with feta cheese; looks very good!
