  • 1 kg of boneless tender (mini tender)
  • 1 cup of white wine
  • ¼ cup of honey
  • 1 cup (tea) of orange juice
  • 1 can of pineapple in syrup
  • 6 tablespoons of pineapple syrup
  • Cloves
  • Sliced ​​pineapple
  • Figs
  • Peaches
  • Thyme on branches

Preparation Mode

  1. In a large bowl, combine the wine, orange juice and pineapple syrup.
  2. In this marinade, place the defrosted tender, cover with film and place in the refrigerator to marinate for at least 12 hours.
  3. Preheat the oven to 180ºC.
  4. Remove the tenderloin from the bowl and place it on a baking tray.
  5. With the tip of a very sharp knife, scratch the surface of the tender, forming diamonds.
  6. Stick the cloves into the joints of the diamonds.
  7. Add the marinade from the bowl over the tenderloin.
  8. Cover with aluminum foil and bake for 20 minutes.
  9. Remove the aluminum foil and coat the tender with honey and return to the oven for another 20 minutes.
  10. Every 5 minutes, open the oven and drizzle the marinade liquid from the bottom of the pan.
  11. Remove and place the tenderloin on a platter.
  12. Distribute the fruits around the tender and decorate with thyme.
