Ingredients

  • 125 grams of wheat flour
  • 1 yolk
  • 90 grams of cold unsalted butter
  • 125 grams of grated Gruyère cheese
  • Black pepper to taste
  • Salt to taste
  • 1 egg beaten with 15 ml of water
  • Grated Parmesan cheese

Preparation Mode

  1. In the processor, place the wheat flour, butter, pepper and salt.
  2. Pulse until you obtain a homogeneous dough.
  3. Add the egg yolk, gruyère cheese and pulse again.
  4. Transfer to a counter and knead until you obtain a firm and homogeneous consistency.
  5. Roll out the dough with a rolling pin until it is 5 mm thick.
  6. Leave to cool.
  7. Preheat the oven to 180ºC.
  8. Cut strips 1 cm wide and 7 cm long.
  9. Place on a baking tray, brush with beaten egg and sprinkle with Parmesan cheese.
  10. Bake for 15 minutes or until golden.

Mom Tips

Allumettes can be made up to a week in advance. Store them in airtight containers.
