Ingredients
- 125 grams of wheat flour
- 1 yolk
- 90 grams of cold unsalted butter
- 125 grams of grated Gruyère cheese
- Black pepper to taste
- Salt to taste
- 1 egg beaten with 15 ml of water
- Grated Parmesan cheese
Preparation Mode
- In the processor, place the wheat flour, butter, pepper and salt.
- Pulse until you obtain a homogeneous dough.
- Add the egg yolk, gruyère cheese and pulse again.
- Transfer to a counter and knead until you obtain a firm and homogeneous consistency.
- Roll out the dough with a rolling pin until it is 5 mm thick.
- Leave to cool.
- Preheat the oven to 180ºC.
- Cut strips 1 cm wide and 7 cm long.
- Place on a baking tray, brush with beaten egg and sprinkle with Parmesan cheese.
- Bake for 15 minutes or until golden.

Allumettes can be made up to a week in advance. Store them in airtight containers.
