Filling Ingredients

  • 1 kg cooked and shredded chicken breast
  • 2 chopped tomatoes
  • 2 chopped onions
  • 6 tablespoons of olive oil
  • Black pepper to taste
  • salt to taste
  • 2 tablespoons chopped parsley
  • 2 boxes of catupiry® type cottage cheese (820 grams)

Dough Ingredients

  • 45 grams of organic yeast
  • 2 tablespoons of sugar
  • 1 kg of wheat flour
  • 1 tablespoon of salt
  • 1 cup oil (tea)
  • 2 cups (tea) of warm water
  • 2 eggs, lightly beaten

Filling preparation method

  1. In a pan, sauté the tomato and onion in olive oil.
  2. Add the chicken, pepper, salt and sauté for another 5 minutes.
  3. Add the parsley, mix and let it cool.
  4. Add the cottage cheese and mix. Reserve.

Dough Preparation Method

  1. In a bowl, mix the sugar, salt and yeast until you obtain a liquid mixture.
  2. Add the oil, water and flour little by little, until it comes off your hands.
  3. Knead and make balls of the same size.
  4. Spread on a floured surface and let rise for 20 minutes covered with a clean cloth.


  1. Model, stuff the esfihas and close them.
  2. Place on a greased baking tray.
  3. Brush the esfihas with the beaten eggs.
  4. Bake for approximately 25 minutes or until golden.

Mother’s Tips

You can shape the sfiha into a triangular or square shape.

Know that chicken is one of the healthiest meats.
