Are you running out of ideas for cooking the cauliflower that’s looking grim at the bottom of your vegetable drawer? It’s your lucky day. Today, we are offering you not one but two quick and delicious recipes. On the one hand, load up on flavor with a whole roasted cauliflower. On the other, fried noodles with cauliflower leaves. Whether you like culinary trips or swear by anti-waste, you will be delighted. Tie on your apron, let’s go crazy!

The ingredients for 4 people

For the sauce:

  • 65 g d’huile d’olive
  • 1 lemon bio
  • 1 tablespoon of Dijon mustard
  • 2 teaspoons of sweet paprika
  • 1 teaspoon of Espelette pepper
  • 4 cloves of garlic
  • 1 sprig of fresh thyme
  • 1 sprig of fresh rosemary
  • 1 teaspoon dried oregano
  • 4 pinches of salt
  • 4 pinches of freshly ground pepper

Preparation time: 15 mins

Cooking time: 45 mins

  1. First step: pre-cooking! To do this, start by preparing the cabbage by removing the outer and hard leaves (remember to put them aside for the 2nd recipe), as well as the base of the section. Then wash the vegetable in water, without cutting it. In a saucepan, bring a large volume of water to the boil. Add the cauliflower and let it cook for 10 minutes. Once the time has elapsed, drain it and let it cool on the work surface.
  2. Meanwhile, prepare the sauce. To do this, strip all the aromatic herbs and place them in the center of a cutting board. Then peel the garlic, cut it into pieces and add it to the aromatic herbs. Using a large knife, very finely chop the garlic and herbs. In a large bowl, pour the olive oil, lemon zest and juice, and mustard. Salt, pepper, add paprika and Espelette pepper. Emulsify everything with a fork. Finally add the aromatic herbs and garlic then mix. It’s already ready!
  3. Now it’s time to actually cook the cabbage. Pour water into the bottom of a gratin dish and place the whole cabbage there. Then brush it with sauce. It must be covered with it. If you have any left, you can use it as a condiment when you eat. Then bake the cabbage at 200° for 35 min. From time to time check its cooking by inserting the blade of a knife into the base of the cauliflower. If it penetrates easily, the cabbage is cooked. Otherwise, continue cooking for a few minutes. Once melted, all you have to do is enjoy!
