Here’s how to turn zucchini into a fun and tasty crustless pizza that will delight your kids’ taste buds, and more. We first make a zucchini galette that we pre-cook in a pan, which will serve as a base, then we garnish it with the same ingredients as the Margarita pizza even if you can customize it as you want.

Preparation of the filling:

1. Slice the mozzarella and let it drain in a colander placed over a bowl.

2. Place a sheet of parchment paper on a baking sheet.

3. Finely chop the onion after peeling it.

4. In a saucepan, heat the olive oil over low heat and add the minced onion. Fry until it becomes translucent.

5. Add the tomato sauce, season with salt and add the basil leaves. Cover the pan and simmer for about 10 minutes. The sauce should retain a liquid consistency. Leave to cool uncovered in the pan, off the heat.

Preparation of the zucchini galette (base of the pizza):

1. Grate the zucchini using the wide-toothed side of a box grater, dropping them into a bowl.

2. Gently squeeze the grated zucchini to extract excess juice, then transfer to another bowl.

3. Season with salt, pepper, garlic powder and paprika. Add grated parmesan, flour and egg.

4. Mix everything thoroughly using your hands. Flatten half of this mixture in a non-stick frying pan 20 cm in diameter, previously oiled, to form a disk. Opt preferably for a frying pan with a removable handle.

5. Arrange slices of well-drained mozzarella on the zucchini disc, leaving a border of about 1 cm all around.

6. Cover the mozzarella with the rest of the zucchini mixture, spread it gently with your hands to obtain a patty. Seal the edges.

7. Turn the heat to medium and cook the galette for about 3 minutes, until the edges are golden brown.

8. Remove the handle from the pan, put a large plate on it. Carefully flip the galette in the pan to cook the other side. Cook for 3 to 5 minutes, until golden brown.

9. Slide the galette onto the prepared baking sheet with the parchment paper underneath.

Cooking and assembling the pizza:

1. Preheat the oven to 200°C in static mode.

2. Spread the tomato sauce over the galette, using the back of a spoon, leaving a border of about 1 cm.

3. Spread pieces of mozzarella over the pizza.

4. Place the pizza in the oven and bake for about 15 minutes, until the mozzarella is melted and the crust is golden brown.

5. When it comes out of the oven, sprinkle the pizza with dried oregano and possibly basil leaves. Serve the zucchini pizza hot or warm.
