An easy to make, simple and delicious bunny cake. We wish you and your family a blessed and very happy Easter!

Ingredients Dough

  • 3 cups (American) of wheat flour
  • 3 cups (American) of sugar
  • 1 cup (American) of cornstarch
  • 1 cup (American) of natural passion fruit juice
  • 250 grams of unsalted margarine or unsalted butter
  • 6 cute
  • 6 egg whites, beaten until stiff
  • 1 tablespoon baking powder

Ingredients Filling

  • 1 can of cream with whey
  • 800 grams of chopped white chocolate
  • 1 cup (American) of passion fruit juice from the fruit itself
  • ½ cup (American) of water
  • ½ cup (American) of sugar
  • 2 heaping tablespoons of cornstarch
  • 1 box of passion fruit flavored gelatin
  • 2 tablespoons passion fruit seeds
  • 18 grams of unflavored gelatin powder
  • ¼ cup (American) of water

Ingredients Topping

  • American Pasta
  • Gel dye

Dough Preparation Method

  1. Grease and flour a 25 cm round pan. Set aside.
  2. Sift together the flour, baking powder and starch. Set aside.
  3. Beat the egg whites until stiff and set aside.
  4. In a mixer, beat the egg yolks with the margarine and sugar until fluffy and soft.
  5. Add the passion fruit juice, alternating with the reserved flour, starch and yeast.
  6. Finally, add the beaten egg whites, mixing everything gently.
  7. Place the dough in the pan and bake until a toothpick inserted into the dough comes out dry.

Preparation Method Filling

  1. In a pan, place the juice, water, starch, passion fruit gelatin, seeds and sugar.
  2. Bring to a boil until thickened.
  3. Add the cream and white chocolate and mix well until melted.
  4. Dissolve the gelatin in water, mix with the cream and refrigerate before filling the cake.

Cake Assembly

  1. Once baked and cooled, divide the cake into three parts and fill them.
  2. Cover the entire cake with fondant.
  3. Shape the rabbit with the dyed fondant.
  4. Decorate the side of the cake with food coloring and sprinkles.

Mom’s Tips

To stick the fondant to the cake, spread a thin layer of dulce de leche over the entire cake.

The rainbow is also made with fondant.

You can use ready-made sprinkles of your choice on the sides of the cake for decoration.
