Ingredients

  • 4 desalted cod loins
  • 2 liters of water
  • 2 potatoes in thick slices
  • 3 cups of broccoli (in bouquets)
  • 1 cup olive oil (tea)
  • Fried garlic to taste (optional)
  • salt to taste
  • olive oil to taste
  • Black olives to taste

Preparation mode

  1. In a pan, heat the water until it boils.
  2. Put the cod.
  3. Cook for 5 minutes and remove with a slotted spoon.
  4. In the same water, cook the potato and broccoli.
  5. Run and book.
  6. Preheat the oven to medium temperature.
  7. Unite a medium refractory with olive oil.
  8. Layer with potatoes, broccoli and cod.
  9. If necessary, sprinkle with salt.
  10. Drizzle with olive oil and cover with aluminum foil and bake for 40 minutes.
  11. Remove the paper and return to the oven for another 10 minutes.
  12. Remove from the oven, sprinkle with fried garlic.
  13. Decorate with olives and drizzle with olive oil.

Mother’s Tips

Note that the cod is already desalted.

The garlic here in the recipe is optional because some people don’t like garlic.

Serve with white rice.

Yield 4 servings.
