How about this bold and nutritious egg recipe? Hmmm… different flavor!
Ingredients
- 1 bunch of fresh green asparagus
- Black pepper to taste
- Salt to taste
- 12 eggs
- 5 tablespoons of butter
- 6 tablespoons of milk
Preparation Mode
- Scrape the asparagus and remove the hard part (base).
- Remove the green ends (approximately 5 cm), set aside.
- Cut the tender part into slices.
- Bring to a boil in boiling water, letting it cook.
- Remove and drain.
- Heat 3 tablespoons of butter, add the asparagus, salt, cover the pan and let it cook over low heat.
- In a refractory dish, melt the remaining butter in a bain-marie.
- Add the eggs one by one, the milk, salt and pepper.
- Mix and let cook; stirring with a wooden spoon.
- When it acquires a creamy consistency, add half the asparagus, mix well and let it cook for a few more minutes.
- Remove and place on serving plate.
- Decorate with the remaining asparagus and the reserved green tips.
- Serve immediately.
Mom Tips
When purchasing: the asparagus must be firm.
Thick asparagus should have its skin removed, thin asparagus does not.
Cooking time will depend on the thickness of the asparagus, but it varies from 2 to 6 minutes for thin and medium asparagus and up to 20 minutes for thick asparagus.
Serve as a starter or as a snack.
