How about this bold and nutritious egg recipe? Hmmm… different flavor!


  • 1 bunch of fresh green asparagus
  • Black pepper to taste
  • Salt to taste
  • 12 eggs
  • 5 tablespoons of butter
  • 6 tablespoons of milk

Preparation Mode

  1. Scrape the asparagus and remove the hard part (base).
  2. Remove the green ends (approximately 5 cm), set aside.
  3. Cut the tender part into slices.
  4. Bring to a boil in boiling water, letting it cook.
  5. Remove and drain.
  6. Heat 3 tablespoons of butter, add the asparagus, salt, cover the pan and let it cook over low heat.
  7. In a refractory dish, melt the remaining butter in a bain-marie.
  8. Add the eggs one by one, the milk, salt and pepper.
  9. Mix and let cook; stirring with a wooden spoon.
  10. When it acquires a creamy consistency, add half the asparagus, mix well and let it cook for a few more minutes.
  11. Remove and place on serving plate.
  12. Decorate with the remaining asparagus and the reserved green tips.
  13. Serve immediately.

Mom Tips

When purchasing: the asparagus must be firm.

Thick asparagus should have its skin removed, thin asparagus does not.

Cooking time will depend on the thickness of the asparagus, but it varies from 2 to 6 minutes for thin and medium asparagus and up to 20 minutes for thick asparagus.

Serve as a starter or as a snack.
