Ingredients

  • 1 peru de 5 kg
  • 3 cups of dry white wine

  • 1 tablespoon pink pepper
  • 1 tablespoon of dried fine herbs
  • Margarine

Farofa Ingredients

  • 200 grams of chopped smoked bacon
  • 1 large chopped onion
  • 1 and ½ tablespoons of sunflower oil
  • ½ small red pepper, chopped
  • 1 cup black plums, pitted, chopped
  • 1 cup chopped dried apricots
  • ½ cup boiling water
  • ½ cup chopped green chilli
  • 250 grams of yellow cornmeal flakes
  • Black pepper to taste
  • Salt to taste

Preparation Mode

  1. Wash the defrosted turkey, dry with paper towel and set aside.
  2. In a blender, blend the wine, onion, garlic and herbs.
  3. Rub the seasoning inside and outside the bird.
  4. On the breast, put the seasoning and a little margarine between the skin and the meat.
  5. Leave it in the fridge covered with plastic wrap for one night.
  6. The next day, close the openings with a needle and thread and preheat the oven to medium temperature.
  7. Place on a baking tray lined with aluminum foil and slices of stale bread.
  8. Bake in the oven – respect the time recommended on the turkey packaging.

Farofa Preparation Method

  1. In a pan, over low heat, add the oil and bacon.
  2. Stir until golden.
  3. Add the onion and brown.
  4. Reserve the flour and add the other ingredients.
  5. Gradually add the flour, mixing.
  6. Season with pepper and salt.

Assembly

  1. Remove the turkey from the roasting pan.
  2. Place the roasting pan on the heat with 1 cup (tea) of white wine, stirring until the residues from the bottom of the pan are removed.
  3. In a blender, add the pan sauce, 1 level tablespoon of wheat flour and blend.
  4. Cook over low heat, stirring constantly until it thickens.
  5. Remove and place in a gravy boat.
  6. Stuff the turkey with the farofa and decorate as desired.
  7. Serve the turkey with the sauce.

You can find fine herbs in good supermarkets or natural products stores.
