Ingredients

  • 450 grams of self-raising wheat flour
  • 3 large beaten eggs
  • 300 grams of unsalted butter
  • 200 grams of sugar
  • 3 tablespoons chopped walnuts
  • 3 tablespoons of grated dry coconut
  • 50 grams of candied fruit
  • 70 grams of chopped cherries in syrup
  • 250 grams of pineapple in syrup
  • 70 grams of white raisins
  • 3 tablespoons chopped angelica (optional)
  • Powdered sugar

Preparation Mode

  1. Grease a round pan approximately 22 cm in diameter and line it with baking paper. Reserve.
  2. In a bowl, place the drained and chopped pineapple. Reserve the pineapple syrup.
  3. In the same bowl, add the candied fruits, cherries, walnuts, grated coconut, raisins, 3 spoons of pineapple syrup and angelica or essence. Mix and set aside.
  4. Preheat the oven to 160ºC.
  5. Using a mixer, beat the butter and sugar until light and fluffy.
  6. Add the eggs little by little.
  7. Sift the flour over the top.
  8. Add the reserved fruit mixture and mix.
  9. Place the dough in the pan and bake for approximately 1 hour 15.
  10. Let cool for 15 minutes and turn out onto a wire rack.
  11. Once cool, place on a cake plate.
  12. Dust the entire cake with powdered sugar.

Mom Tips

Angelica is a plant. Know that one of the most famous liqueurs uses it as an ingredient.

If there is no angelica, replace it with the essence of your choice.
