Ganache to Decorate

  • 500 grams of semi-sweet chocolate
  • 200 grams of cream
  • 15 grams of cake emulsifier

Preparation Mode

  1. Prepare the water bath.
  2. Combine the chocolate with the cream.
  3. Stir lightly in a water bath until well dissolved.
  4. Wait for it to cool and add the emulsifier.
  5. Beat with a mixer until smooth.

Mom Tips

Always use good quality chocolate.

Do not use fractionated chocolate (covering), so that the flavor of your ganache is not compromised.

The ideal is to use fresh cream, as its high fat content, approximately 35%, will guarantee shine.

The emulsifier gives stability and firmness to the ganache.

Excellent for decorating cupcakes.
