For breakfast on toast or to accompany a yogurt cake, jam has become an essential part of the daily life of many French people. But although this product is rich in fruit, it contains sugar, a little too much sugar… Fortunately, it is possible to make jam with only 30 grams of sugar. Here’s how to do it.

It is in a video shared on Instagram that Doctor Jimmy Mohammed warns about the sugar content in jams : “Jam is not necessarily bad. The problem: the ones we find in stores are too sweet. The fruit is already sweet and we will add sugar to finally end up with 50 or even 60% sugar.”

Fortunately in the rest of his video, Raphaël Haumontphysical chemist, known for his work on molecular cuisine, reveals her low-sugar jam recipe.

In the recipe that the specialist offers us, you will only need 30g of sugar. Indeed, all this is possible thanks to agar-agar, a natural plant-based gelling agent which will allow you to obtain the right texture.

To make this jam at home, you will need:

  • 450g of fruit
  • 30g of sugar
  • 2g d’Agar-Agar

  1. Start by putting your fruit in a saucepan before adding the agar-agar and sugar. Heat gently until boiling.
  2. Then let this mixture boil for 2 minutes and immediately place the mixture in glass jars. “We are cooking extremely quickly. There we will keep the color, the taste, the vitamins of the fruits. This has nothing to do with jams that are cooked for a very long time and which sometimes lose their nutritional and taste value” explains Raphaël Haumont.
  3. Once in the jars, let the jam set for 2 hours in the refrigerator. It’s ready ! Verdict? “We really taste the fruit and the freshness of the fruit is not parasitized by all this sugar!”explains the expert.

Be careful though, unlike classic jams, this low-sugar recipe cannot be kept for as long. After preparation, It is possible to keep it in the refrigerator for around 4 to 5 days but no more.
