  1. Start by washing the potatoes in water, without having peeled them. If their condition requires it, you can also brush them. Then boil them for about 15 minutes in a saucepan. Be careful, make sure the potatoes are put in the saucepan while the water is still cold. Otherwise, they could explode during cooking. Drain them then cut them into quarters.
  2. In a salad bowl, mix the olive oil, paprika, herbs de Provence, salt, pepper and flour, then add the potato wedges and mix. They must be well coated. Finally place them on a baking tray covered with baking paper and bake them for around 35 minutes at 190°. When you come out of the oven, you will get crispy and perfectly seasoned potatoes.
