On colder nights, how about a nutritious and tasty green soup?


  • 5 cups of sanitized spinach leaves
  • 1 dessert spoon of olive oil
  • 1 clove of crushed garlic
  • 1 tablespoon grated onion
  • Salt to taste
  • 4 cups of vegetable broth
  • ½ cup (tea) skimmed milk
  • 1 tablespoon of wheat flour
  • 2 tablespoons of cream

Preparation Mode

  1. Place the spinach, olive oil, garlic, onion, salt in a pan and sauté.
  2. Add the vegetable broth.
  3. Boil for approximately 10 minutes.
  4. Mix the milk with the flour and add to the stew.
  5. In a blender, blend the entire mixture until you obtain a homogeneous cream.
  6. Return to heat until it boils.
  7. Add the cream and heat without boiling.
  8. Place in a soup bowl and serve.

Mom Tips

If you prefer, use light cream.

Serve the soup accompanied by croutons (seasoned mini toasts).

Yields 3 servings.
