Quiche Lorraine is one of the flagship recipes of French cuisine. Many chefs are taking this classic to bring it up to date: everyone has their own tip. If recently, we shared with you the secret of chef Anne Sophie Pic, today we are interested in the preparation of Jean françois Piège. The starred chef has also decided to offer his version of the famous quiche Lorraine. It was in a video posted on Instagram in collaboration with the media Le Point that the chef gave his tips. Before starting, he warns that his preparation is a revisit: “It’s my Lorraine quiche, with a little twist.” Here is the quiche Lorraine made by Jean-François Piège.

To make this Lorraine quiche at home, you will need:
- 6 thick slices of smoked bacon, skin removed
- nutmeg
- freshly ground pepper
- sel
For the set cream machine, you will need:
- 250 g of cream
- 250 g of milk
- 2 eggs
- 2 egg yolks
- Start by cutting the bacon slices into large pieces of bacon. Be sure to leave the edges to best preserve the smoked taste.
- Then, blanch the bacon. To do this, immerse them in a saucepan of cold water and gradually bring to the boil. Do not add salt.
- Once boiling, drain them and brown them in the pan, taking care to mix them well once they start to turn golden.
- Then move on to preparing the set cream. To do this, break the two eggs into a mixing bowl and add the two yolks before mixing.
- Add the milk, cream, salt, pepper and 2 small gratings of nutmeg. Mix with a whisk and don’t forget to filter the mixture to be sure not to leave any shells.
- Once your appliance is ready and the bacon is crispy, filter it to remove excess fat.
- Then distribute them over the shortcrust pastry, previously baked in the oven, blind, for 20 minutes at 180-200°C.
- Heat the device very lightly in the microwave or on the corner of the stove for faster cooking of the quiche.
- Pour the mixture over the bacon and cook everything at 160°C for 20 to 25 minutes. The quiche is cooked when the appliance holds together.
