Learn how to make the much-loved Japanese kebab. Also check out the teriyaki sauce, cocktail sauce and goma-shio.


  • 150 grams of chicken breast cut into 2 cm cubes.
  • 250 grams of chicken liver, cut into 2 cm cubes (optional)
  • 3 tablespoons of oil
  • 1 teriyaki sauce recipe
  • 1 teriyaki or goma-shio cocktail sauce recipe
  • Chopped chives
  • Bamboo skewers

Preparation Mode

  1. In a frying pan, heat the oil and fry the chicken breast pieces, stirring constantly, for 5 minutes.
  2. Remove and drain on paper towel.
  3. Pour the teriyaki sauce into the skillet and add the chicken liver.
  4. Let it fry, stirring constantly, for 5 minutes.
  5. Remove from the pan and drain.
  6. Arrange on skewers, the chicken interspersed with the chicken liver.
  7. Place on a platter and serve with cocktail sauce or goma-shio.
  8. Decorate to taste with chives.

Teriyaki Sauce Ingredients

  • ¼ cup soy sauce
  • 2 cups (tea) of tomato juice
  • 1 tablespoon of Madeira wine

Preparation Mode

Bring all the ingredients to the boil and cook until the sauce is reduced by half.

Ingredients Teriyaki Cocktail Sauce

  • ¼ cup horseradish

Preparation Mode

Add the prepared horseradish to the ready-made teriyaki sauce

Gum-shio Ingredients

  • 2 tablespoons of sesame seeds, toasted with salt.

Preparation Mode

Mix a spoonful of sesame seeds into the ready-made teriyaki sauce.
