It was on Instagram, on his Italian grocery account @casa_zanoni, that the Italian chef shared his secrets for making his homemade mascarpone. A cheese, mainly made from cow’s milk cream, which contains at least 35% fat in order to obtain the right texture.

Here’s how to make the chef’s recipe.

You will need only two ingredients for the preparation:

  • 1 l of cream with 35% fat (prefer Isigny cream)
  • The juice of a lemon
  1. Start by pouring the liter of cream into a saucepan before heating it to 85°C.
  2. Once the cream is heated to the right temperature, simply remove it from the heat and add the lemon juice. Then mix everything.
  3. Then let the cream sit for 10 minutes.
  4. Then move on to filtering. To do this, cover your sieve with a damp cloth. Place the sieve in a salad bowl and pour the cream onto the cloth.
  5. Let it drain for 12 hours in the refrigerator. And it’s ready!

You can use mascarpone to perfect your recipes.
