Ingredients
- 2 kg of quince
- Refined sugar
- ½ kg of crystal sugar
Preparation Mode
- Clean the quinces and peel them with a stainless knife.
- Remove the hard parts with the seeds and cut into pieces.
- Place in a pan, cover with water and place over low heat.
- Cook until they are soft.
- Drain and pass the quinces through a bamboo sieve.
- Weigh the mass obtained.
- Use the same weight of caster sugar.
- In a saucepan suitable for sweets, place the refined sugar, ½ liter of water and bring to the boil.
- Let it boil until you get a thin syrup.
- Add the quince paste and stir continuously, until it starts to come away from the pan.
- Remove from heat and place on a baking tray 2 to 3 cm thick.
- Smooth well.
- Let it dry in a cool place for 10 to 12 days.
- Cut into squares and pass them in crystal sugar.
- Place on a rack and let dry again.
Mom Tips
Once the marmalade is ready, pack it in a closed tin, separating the layers with waterproof paper.
The sweetness can also be checked by placing a spoonful of dough on the marble. If the candy doesn’t spread; it’s on point.
