Learn how to make delicious homemade marmalade.


  • 2 kg of quince
  • Refined sugar
  • ½ kg of crystal sugar

Preparation Mode

  1. Clean the quinces and peel them with a stainless knife.
  2. Remove the hard parts with the seeds and cut into pieces.
  3. Place in a pan, cover with water and place over low heat.
  4. Cook until they are soft.
  5. Drain and pass the quinces through a bamboo sieve.
  6. Weigh the mass obtained.
  7. Use the same weight of caster sugar.
  8. In a saucepan suitable for sweets, place the refined sugar, ½ liter of water and bring to the boil.
  9. Let it boil until you get a thin syrup.
  10. Add the quince paste and stir continuously, until it starts to come away from the pan.
  11. Remove from heat and place on a baking tray 2 to 3 cm thick.
  12. Smooth well.
  13. Let it dry in a cool place for 10 to 12 days.
  14. Cut into squares and pass them in crystal sugar.
  15. Place on a rack and let dry again.

Mom Tips

Once the marmalade is ready, pack it in a closed tin, separating the layers with waterproof paper.

The sweetness can also be checked by placing a spoonful of dough on the marble. If the candy doesn’t spread; it’s on point.

Yield 2 kg.
