Thanks to his Mentor Program, available on his Youtube channel, Philippe Etchebest, the famous juror of the show Top Chef, offers his community of fans every week classic and essential recipes of French cuisine, he offers his best advice for learning the basics.
In his video published Wednesday October 4, the chef chose to make a celery remoulade “in his way”. “Be careful, not the one from the canteen, the real one” he specifies. Easy to prepare, inexpensive and “that we can do with products that are easily found”, this recipe may well reconcile you with celery. Here are the steps to follow to reproduce it at home.
To make this recipe for 6 people, you will need:
- 500 g celery root
- 2 green apples
- 10 sprigs of fresh chives
- 1 lime
- 1 tbsp. tablespoon of whole-grain mustard
For the mayonnaise
- 2 egg yolks
- 15 g Dijon mustard
- 2 tbsp. teaspoon of white alcohol vinegar
- 20 cl of sunflower oil
