This much-requested snack, appreciated in bars and pubs, can be made at home. Snack!


  • 1 kg diced pancetta
  • 1 tablespoon minced garlic
  • Salt to taste
  • 1 and 1/3 cup (tea) of water
  • 2 tablespoons of lemon juice
  • 1 tablespoon of baking soda
  • Frying oil
  • Lemon

Preparation Mode

  1. Season the pancetta with the juice, salt, garlic and bicarbonate.
  2. Place in a pressure cooker and pour water.
  3. Cover and cook over low heat for 15 minutes, after the pressure has started.
  4. Remove and let the pressure release completely.
  5. Open the pan and drain the pancetta.
  6. Sew with paper towel and fry in oil at medium temperature, stirring until golden.
  7. Remove and drain on paper towel.
  8. Serve.

Mom Tips

Serve accompanied by lemon wedges.
