Dough Ingredients

  • 1 kg of wheat flour
  • 2/3 cup oil (tea)
  • 1 cup milk (warm)
  • 1 cup boiled and mashed potatoes
  • 1 teaspoon salt
  • 2 eggs
  • 3 tablets of biological ferment
  • Oil for greasing

Stuffing Ingredients

  • 600 grams of skinless fresh sausage
  • 2 tablespoons of water
  • 2 crushed garlic cloves
  • 1 large chopped onion
  • 2 chopped tomatoes
  • ½ cup chopped parsley (chopped)
  • 300 grams of shredded mozzarella cheese
  • Black pepper to taste
  • salt to taste

Preparation mode

  1. In a bowl, separate the flour.
  2. In the blender, beat the rest of the ingredients.
  3. Pour over the flour, beating with a wooden spoon.
  4. Transfer the dough to a smooth surface and knead for 5 minutes.
  5. Cover and let rest for 1 hour.

Stuffing Preparation Method

  1. In a pan, fry the sausage with the water, until golden.
  2. Add the garlic and onion and let it wilt.
  3. Add the tomato, the green smell, the mozzarella cheese, the pepper and the salt.
  4. Mix for 1 minute.

Assembly

  1. Preheat the oven.
  2. Roll the dough into circles, fill and shape the esfihas.
  3. Take to bake in the oven for approximately 20 minutes or until golden.

Mother’s Tips

Serve with lemon, mustard or ketchup.
