Salsas are tasty and replace traditional sauces, mayonnaise, mustard or ketchup very well.



  • 4 medium tomatoes cut into quarters
  • 1 large onion cut into quarters
  • 2 peeled garlic cloves
  • ½ cup basil leaves
  • 2/3 cup (tea) tomato puree
  • 2 tablespoons red wine vinegar
  • Freshly ground black pepper, to taste
  • Salt to taste

Preparation Mode

  1. In the food processor, place the basil, tomato puree and vinegar.
  2. Beat until well blended.
  3. Without turning off the appliance, add the garlic cloves.
  4. Add the onion and tomatoes and turn the processor on/off several times until coarsely chopped.
  5. Season with pepper and salt.
  6. Transfer to a bowl, cover with plastic wrap and store in the refrigerator for 1 hour before serving.

Avocado and Mango Salsa


  • 1 cup chopped avocado pulp
  • 1 cup chopped mango pulp
  • ½ cup red pepper, seedless, chopped
  • ½ cup chopped red onion
  • 4 cloves of garlic, chopped
  • 4 tablespoons olive oil
  • 6 tablespoons of lemon juice
  • 4 tablespoons chopped coriander
  • 1 tablespoon grated lemon peel
  • Salt to taste

Preparation Mode

  1. In a bowl, place all the ingredients.
  2. Mix and season with salt.
  3. Cover the bowl with plastic wrap.
  4. Refrigerate for 1 hour before serving.

Salsas serve both as a sauce and as a side dish. They are made from chopped vegetables and fruits.

They can also be served simply with toast, with chips, corn tortillas, etc.

Tomato salsa accompanies grilled meats in general.

Avocado and Mango salsa goes well with chicken and fish, grilled or cooked.
