Ingredients
- 400 grams of cleaned prawns
- 3 cups of white rice
- 1 cup diced zucchini
- ½ cup diced green pepper
- 1 diced seedless tomato

- 2 garlic cloves
- 1 tablespoon of olive oil
- Juice of ½ lemon
- Salt to taste
- Coriander to decorate
Preparation Mode
- Season the shrimp with lemon and salt. Leave to marinate for 10 minutes.
- In a large frying pan, brown the garlic and add all the shrimp without the lemon juice.
- Add the zucchini, pepper, tomato and green chillies.
- Add a little water, enough to cover the shrimp in the pan.
- Let cook over low heat for 5 minutes. Remove and reserve.
- Prepare the rice in the traditional way but with little salt.
- Remove and stir the rice with a fork so that it becomes loose.
- Place the rice on a platter.
- Add the shrimp sauce and mix.
- Decorate with coriander and serve immediately.

Zucchini is optional and you can replace it with another vegetable of your choice.
