  • 400 grams of cleaned prawns
  • 3 cups of white rice
  • 1 cup diced zucchini
  • ½ cup diced green pepper
  • 1 diced seedless tomato
  • Chopped green chili to taste
  • 2 tablespoons of tomato paste
  • 2 garlic cloves
  • 1 tablespoon of olive oil
  • Juice of ½ lemon
  • Salt to taste
  • Coriander to decorate

Preparation Mode

  1. Season the shrimp with lemon and salt. Leave to marinate for 10 minutes.
  2. In a large frying pan, brown the garlic and add all the shrimp without the lemon juice.
  3. Add the zucchini, pepper, tomato and green chillies.
  4. Add a little water, enough to cover the shrimp in the pan.
  5. Let cook over low heat for 5 minutes. Remove and reserve.
  6. Prepare the rice in the traditional way but with little salt.
  7. Remove and stir the rice with a fork so that it becomes loose.
  8. Place the rice on a platter.
  9. Add the shrimp sauce and mix.
  10. Decorate with coriander and serve immediately.

Mom Tips

Zucchini is optional and you can replace it with another vegetable of your choice.
