Filling Ingredients
- 2 large bunches of spinach
- 3 tablespoons of butter
- 2 tablespoons of wheat flour
- 1 can of cream
- Nutmeg to taste
- Black pepper to taste
- Salt to taste
- 4 eggs well beaten
Dough Ingredients
- 3 eggs
- 4 cups (tea) of wheat flour
- 1 dessert spoon of salt
- 1 tablespoon of chemical baking powder
- 250 grams of margarine
- 1 egg for brushing
Dough Preparation Method
- Place all dough ingredients in a bowl.
- With your hands, mix everything without kneading the dough.
- When you obtain a homogeneous mass; put it in a plastic bag.
- Remove the air and refrigerate for 1 hour.
- Powder flour into a thick plastic bag.
- Place the dough inside and with the help of a rolling pin; open the dough.
- Line a 24 cm diameter mold or ovenproof dish with the dough.
- Fill with spinach cream and cover with reserved sauce.
- Bake at 180ºC until golden.
Filling preparation method
- Clean the spinach, wipe with paper towel and set aside.
- Melt the butter and add the wheat flour in it.
- Combine the cream with 2 tablespoons of cold milk.
- Over very low heat, stir well and let it thicken.
- Season with nutmeg, pepper and salt.
- Remove from heat and add beaten eggs.
- Reserve 4 tablespoons of this sauce.
- Add the spinach to the rest of the sauce and return to a very low heat, stirring well.
- If necessary, add more salt and pepper.
