  • 1 kg of potatoes, boiled and passed through the juicer
  • 3 excited
  • 1 whole egg
  • Nutmeg to taste
  • Black pepper to taste
  • Salt to taste
  • 2 tablespoons of wheat flour
  • 1 cup (tea) breadcrumbs
  • 1 and ½ cup (tea) oil
  • Mozzarella cheese or diced ham

Preparation Mode

  1. In a bowl, place the squeezed potatoes while still hot.
  2. Add the egg yolks one at a time, beating well after each addition.
  3. Season with nutmeg, pepper and salt.
  4. Let it rest for 15 minutes.
  5. Sprinkle a smooth surface with flour, pour in the puree and work the dough until it is smooth and uniform.
  6. Divide the dough into four.
  7. Roll each part into a rope about 3 cm thick.
  8. Cut into croquettes, adding cubes of mozzarella and ham to each one.
  9. Beat the egg with a pinch of salt, dip the croquettes in it one by one, then coat in the breadcrumbs.
  10. Heat the oil and add a few croquettes, letting them brown for 5 minutes.
  11. Repeat the operation until all the croquettes are finished.
  12. Remove and place on paper towel.
  13. Serve immediately or leave in the heated oven, with the door open so that the crust becomes very crispy.
