  • 4 kg of ham
  • 1 whole pineapple, peeled and chopped
  • 1/2 cup dry white wine
  • 2 large onions cut into pieces
  • 1/2 cup olive oil (tea)
  • 2 tablespoons of salt
  • 5 cloves of garlic
  • 3 bay leaves
  • Black pepper to taste
  • Cloves to taste
  • 500 ml of water
  • Pineapple slices to decorate
  • cherries in syrup

Preparation mode

  1. With a knife, pierce the whole shank.
  2. Place the shank inside a large, reinforced plastic bag, suitable for food. Reserve.
  3. In the blender, beat the pineapple, wine, onions, olive oil, salt, pepper and garlic.
  4. Put the mixture (marinade) inside the plastic bag with the shank, the bay leaves, the cloves, close it and leave it in the fridge until the next day.
  5. At dawn, place the shank in a large roasting pan with part of the marinade, cover with aluminum foil and bake for approximately 4 hours or until very soft.
  6. Every hour soak the ham with the broth that forms in the roasting pan.
  7. After roasting, check with a fork if it is soft and, if so, remove the aluminum foil and let it brown for approximately another 40 minutes.
  8. Remove, place on a refractory platter and decorate with pineapple and cherries.

Mother’s Tips

When the ham is roasting, if necessary add more marinade and more water.

For each kg of ham = approximately 1 hour in the oven.
