  1. To start, prepare the dough. To do this, start by dissolving the fresh yeast in the milk.
  2. Then pour in the flour, the milk/yeast mixture, the egg and the salt. Mix well by hand, or with an electric mixer. When the dough becomes sticky, add the butter cut into pieces and knead by hand. Add a pinch of flour to the dough, then ball the dough. Then let it rise in the salad bowl at room temperature until it has doubled in volume.
  3. Butter and flour the tart pan. Roll out the degassed dough and let it rise again for 30 minutes to 1 hour.
  4. Once the dough has risen, cut the maroilles into strips and place them on top. The dough should be completely covered with cheese. Add pepper and finally bake the tart for 20 to 30 minutes in an oven preheated to 190°C. Once it is golden brown, all you have to do is enjoy it!
