Temperatures are rising and the heat is felt. To deal with this situation, we opt for light and refreshing dishes. If the salads are essential in this summer season, on the dessert side it is the ice creams that stand out. If vanilla-chocolate ice cream has already proven itself, why not bet on a much less expected frozen preparation but just as delicious: the parfaits.

This frozen dessert comes from Italy. It is a compromise between ice cream and mousse, hence its name. The advantage? It is available in many ways and can thus satisfy many palates. Today, we invite you to discover the version of Laurent Mariotte very easy to do!

Laurent Mariotte recently shared his version of the semifreddo, a perfect dessert for the summer season. Chocolate, served with homemade whipped cream and a few red fruits: it will please everyone and will please young and old alike.

And to take nothing away from the pleasure, this preparation is particularly simple to make sinceit will only take you 30 minutes. However, it will take 3 hours of freezing to enjoy it chilled.

To do it again at home, here is how to proceed.

To prepare this frozen dessert for 6 to 8 people, you will need the following ingredients :

  • 20 cl whipping cream
  • 100 g of mascarpone or raw cream
  • 100g dark chocolate
  • 25g cocoa powder
  • 3 eggs
  • 50 g blond cane sugar
  • 1 bowl of mixed red fruits (raspberries, currants, blueberries, Mara des bois strawberries)
  1. Start by lining a cake tin with cling film and put everything in the freezer.
  2. Melt the chocolate in a bain-marie before adding the cocoa powder. Mix.
  3. Then separate the egg yolks from the whites. Whip the whites in the bowl of a food processor with the sugar.
  4. Whip the whipped cream.
  5. Then, in a salad bowl, also whisk a little mascarpone and incorporate the whipped cream then stir everything. Take a little of this mixture for decoration.
  6. Add egg yolks and melted chocolate. Mix again. Put the egg whites in the mixture and pour everything into the cake pan.
  7. Store the preparation for at least 3 hours in the freezer or overnight if possible.
  8. Then unmold your semifreddo on a cake plate and coat it with the remaining whipped cream.
  9. Add red fruits.

All that’s left is to taste!
