Vegan recipe! A very good cupcake! Even if you’re not vegan, give it a try!


  • 2 cups of whole wheat flour
  • ½ cup (tea) vegetable oil
  • 1 cup (tea) demerara sugar
  • ¾ cup of water
  • 2 teaspoons of zest of 1 lemon
  • ¼ cup (tea) lemon juice
  • 1 and ½ teaspoon of baking powder
  • ¼ teaspoon of baking soda

Preparation Mode

  1. Grease and flour cupcake tins or an English cake pan.
  2. Preheat the oven to 210ºC.
  3. In a bowl, place the wheat flour, oil, sugar, water, zest and lemon juice.
  4. Mix well until you obtain a homogeneous dough.
  5. Add the yeast, bicarbonate and mix slowly.
  6. Pour the dough into the molds or mold.
  7. Bake for approximately 40 minutes or until cooked and golden.

Mom Tips

Demerara sugar contains no additives and has light brown grains and has high nutritional values. A sugar that does not alter the flavor or color of preparations. It is found together with oat flour in natural food stores/houses, in good supermarkets or culinary product stores/confectionery stores.

Tips: Veganism is the choice of some people who, for ethical reasons, linked to animal rights, decided not to consume any product of animal origin. This includes, in addition to all types of meat, milk and its derivatives, eggs, gelatin and also the use of clothing or accessories made of leather, fur and wool.

Approximate yield of 8 to 10 servings.
